Strawberry goji berry red onion roasted chickpea salad

There wasn’t a whole lot I could find in the fridge today. When I spotted the strawberry, an AHA moment happened!! It is really spring now with the weather being double digits. So salad it was going to be. I wanted fruits & nuts. But the goji berries called, so I abandoned the nut idea.

Spice Mix
1 cup strawberries, washed, hulled and diced
1 red onion, peeled & diced
2 tbsp goji berries(soaked in ¼ cup hot water)
1 tbsp roasted small brown chick pea
Spice mix/salad dressing
1 tsp coconut oil
½ tsp mustard seeds
½ tsp urad dal
1 tsp chopped fresh cilantro

Method
•  Drain water from goji berries. Set aside. SOS. Feel free to drink the water, its quite good for you.
•   Mix together diced strawberries, onion, drained goji berries, and roasted chick pea. Set aside.
•   Heat oil in pan. Add mustard seeds. When they splutter, add urad dal. When that’s nice & golden brown, remove from fire.
•   Pour spice mix over salad.

Serve chilled or at room temperature. I served it with some kale chips, steamed white rice, and tandoori tikka. Watch for those unique recipes, coming soon. This salad was the best I’ve had in ages, hope you enjoy it as much as I enjoyed making it & sharing the recipe with you.
